About oolong tea

Oolong is partially oxidized — between green and black. Steeps 3-5 minutes at 85-95°C. The most complex tea family with hundreds of varieties from Taiwan and Fujian China.

How it works

Western: 90°C, 1 tsp per cup, 3-5 min, single infusion. Gongfu: 95°C, 1 tbsp per small pot, 15-30 sec for first infusion, increasing 5-10 sec per subsequent infusion. Up to 8-10 infusions from quality leaves.

Oolongs range from light (10-30% oxidized — more like green tea) to dark (60-80% oxidized — more like black). Famous types: Tieguanyin, Da Hong Pao, Dong Ding, Bai Hao Oolong (Oriental Beauty).
