About green tea

Green tea steeps at 75-80°C for 2-3 minutes. Brewing too long or too hot extracts bitter tannins. The shortest steep window of any tea type — precision matters.

How it works

Heat water to 75-80°C (175-180°F) — hotter water destroys delicate compounds. Use 1 tsp per cup. Steep 2-3 minutes. Strain immediately to prevent over-extraction. Sencha and gyokuro at lower end (75°C); bancha and houjicha tolerate 85°C+.

Green tea is processed by steaming or pan-frying immediately after picking — preventing oxidation. Japanese vs Chinese green teas differ: Japanese typically steamed (vegetal), Chinese pan-fired (nuttier).
